Walk into Fosetter and ask about chenpi, and Carmen will open a box right in front of you. "Every product we sell carries our name," she says. "So I dare to open it." This guide follows what she showed us at the counter in October 2026, with a little background we checked ourselves.
What Xinhui chenpi is
Chenpi is dried, aged citrus peel, used in Cantonese soups, sweet soups and teas. The most prized kind comes from Xinhui, a district of Jiangmen in Guangdong, made from a local mandarin known as chazhigan. Xinhui chenpi has been a protected Chinese geographical indication product since 2006, and in Xinhui the peel has to age for at least three years before it can be sold as chenpi.
Different quality is not the same as fake
Carmen starts with a point she repeats often. "There are many different qualities of Xinhui chenpi out there. I can't call them fake. It is real fruit peel. What we need to understand is how they differ." So she lays them side by side so you can look and smell for yourself.
Ganta, the small whole fruits
The first jar holds small dark round fruits, which she calls ganta. Hers are more than ten years old, and they smell a lot like orange peel. "Many people talk about wild ganta. There is no such thing as wild," she says. The fruit is picked young, while the Xinhui mandarin is still growing, and then left to age naturally until it becomes ganta.
Peel from old trees
Next she picks up a piece of peel from old trees. Each piece has rough, scab-like marks on the skin. "That is how you know it is old-tree fruit. The ordinary ones are usually very smooth." She adds that every time you open the bag, the smell is a little different.
Four things to check when you buy
- The five-point stem mark. Xinhui peel has a small stem point, and the peel around it opens in five points, like a star. "If the chenpi you buy does not have this five-point centre, it may not be Xinhui chenpi." She says peel without it may come from Guangxi or other nearby areas.
- Oil glands. Turn the peel over. Even without a lamp you can see the oil glands, small dots packed close together. "Every piece is the same. It is not because I mixed something in."
- Light through the peel. Hold good peel up to a light and it glows through. "Look how pretty it is," she says, holding one up.
- Thickness. Ordinary peel for soup is much thicker. Holding one up, she laughs that it is so thick it could almost be pomelo peel.
Soup peel has its place too
Carmen keeps an ordinary soup peel on the shelf as well. It is still from Xinhui, but she does not call it chenpi, because the quality is different. It is fine when you just want flavour in a soup. "Some people cannot afford the expensive kind, and that is all right," she says. She simply wants customers to know which one they are holding.
Why Xinhui chenpi became so famous
She tells a story she heard about Hong Kong, where someone sold a bowl of red bean soup for more than two hundred thousand and said, "My red bean soup is not expensive because of the red beans. It is our chenpi that is expensive."
Then she explains where the fame comes from. Xinhui, Taishan and the towns around them are home to many families with relatives overseas. In the old days, leaving meant a month on a ship, and coming home took another month. Older people kept their own peel at home. Every year they took it out to dry in the sun, then packed it back into the jar, again and again, for as long as sixty years. When an elder was near the end and the family waited for children overseas to come home for a last visit, that old peel was used generously. Some ground it into powder and boiled it to drink, to ease the phlegm. That, she says, is why people treasure aged Xinhui chenpi.
How Fosetter packs it
Carmen orders her chenpi in advance and has it packed box by box in Fosetter's own custom packaging. Even through the bag, you can smell it. You can see the range at the shop at 78 Rue De La Gauchetière Ouest, or browse our herbal teas.
