Our bird's nest fragments are real nest. They are the small pieces that break off while the cups are picked and cleaned, so you get the same nest in smaller pieces and at a lower price. Few shops prepare fragments as well as we do.

Bird's nest is graded by how whole the pieces are, from cups to strips, corners, threads and fragments. The difference is mostly in looks and price.

How to prepare. Soak in cold water for 2 to 4 hours until soft, drain, then double-boil gently with rock sugar or use it in your own recipe.
