Look at a cup under the light and you should see a clear texture and a natural colour with no shine. That is what Carmen looks for in every batch. Our nests are dry, which keeps them well in a sealed box.

How to prepare. Soak in cold water for 2 to 4 hours, until the cup is soft. Tear it along the strands, drain, then double-boil gently.
